Alright. There are many sensational cheescake recipes from around the world. Connoisseurs will, no doubt have enjoyed baked versus cold, French versus New York cheesecakes and many more as well. Perhaps you are looking for a refreshing change. Why not try this traditional, sensational Aussie cheesecake!

Ingredients

Filling
250 grams of reduced fat cream cheese (room temperature)
1 cup of reduced fat condensed milk (room temperature)
juice of two lemons
lemon zest from one lemon
1 cup whipping cream
1 teaspoon vanilla essence

Base
2 cups of finely crushed plain sweet biscuit crumbs
2 rounded teaspoons of cocoa powder
2-3 oz of melted butter

Topping
1 cup passionfruit pulp
2 rounded teaspoons of gelatin
2 oz of hot water

Directions

Base
1. Thoroughly mix biscuit crumbs, sifted cocoa powder and melted butter.

2. Press firmly into the base of greased cheesecake pan.

3. Place in the refrigerator to set whilst preparing the filling.

Plain biscuits can vary in butter content. If you find the base does not form a ball when squeezed in your fist, add a little more melted butter to ensure the base will hold together when cold.

Filling
1. In an electric mixer, beat cream cheese until softened and fluffy.

2. Add condensed milk, lemon zest and vanilla essence until well combined.

3. In a separate container, with very clean beaters, whisk the cream until firm peaks form. Set aside.

4. Add the lemon juice to the cream cheese and condensed milk mixture. Beat well. The lemon juice will start to react and cause the mixture to thicken.

5. On a very slow speed beat in the whipped cream until just combined.

6. Pour mixture onto chilled biscuit base.

7. Place cheesecake into the refrigerator for 3 hours to firm up.

Topping

1. Dissolve the gelatin powder in the hot water according to manufacturer’s directions.

2. Mix dissolved gelatin into passionfruit pulp and place in the refrigerator in a small bowl.

3. When nearly set, but still pourable, pour passionfruit and gelatin mixture over the chilled cheesecase.

4. Return to the refrigerator and chill several hours before serving.

4 oz 125 g spreadable cream cheese, at room temperature
2 tbsp 30 mL each finely diced red pepper and chopped chives
Lemon peel or chopped chives (optional)

Nutrition Features

Preheat the oven to 400 F (200 C). Lay one sheet of phyllo pastry on a large, clean cutting board. Brush with melted butter. Top with the second sheet of phyllo pastry and brush with remaining butter. Cut the pastry lengthwise into 4 strips and crosswise into 6 strips to make 24 equal-sized squares.


Press each square into the bottom of a buttered, mini muffin tin. Bake for 3 to 4 minutes or until golden and crisp. Cool completely and reserve in an airtight container for up to 4 days.


Blend the tuna with the cream cheese and red pepper until almost smooth. Spoon the mixture into the cups and garnish with lemon peel or chopped chives (if using). Makes 24 tartlets.


Variations: Substitute other flavoured tunas such as Sun-dried Tomato & Basil or Spicy Thai Chili.


Tips:



  1. Spoon the mixture onto melba or pumpernickel rounds instead of making the toast cups.
  2. Make lemon peel strands using a citrus zester.

Spain is famous for its tapas and, whichever Spanish bar you
frequent, in whichever area of the country, you are sure to
find them.

So, what exactly are “tapas” and where did the name come from?

Tapas are, essentially, snacks and the word literally means
“cover”. The name originates from the card which used to be
placed on top of your drink to protect it from the flies
(this can be a hot country!).

At some point in time, it became popular to place a little
snack on top of this card. At first, this would just have
been something simple like a few nuts and olives, or a fresh
slice of crusty Spanish bread plus topping.

In those, not-so-far-gone days, the tapas were free! That
is not usually the case these days, although you will
occasionally be presented with a small dish of crisps or
olives to go with your drink.

Nowadays, there is a wide variety of (paid) tapas, with
some bars really going-to-town on them and offering
highly original, magnificently presented snacks.

But, even a fairly humble bar will present you with the
opportunity to enjoy a slice of tortilla (Spanish omelette),
boquerones (fresh, marinated anchovies preserved in olive
oil and garlic), calamares (squid), championes al ajillo
(garlic mushrooms), jamn serrano, Manchego cheese, etc.

Are you keen on cooking? Then perhaps you would like
to try out this tapas potato recipe called “Patatas
Bravas”. An old Spanish favorite, it is simple to
prepare, using fairly basic ingrediants but, it should
only be savored by the courageous as it is quite spicy!
Ingrediants are for four people.

Ingrediants

750 g potatoes

4 dessertspoons olive oil

Salt and black pepper

2 teaspoons sweet paprika

teaspoon cayenne pepper

2 dessertspoons red vinegar wine

2 teaspoons tomato purée
Method

1. Peel potatoes and cut into chunks.

2. Fry in oil for 3-4 minutes until lightly colored.

3. Add salt and pepper to potatoes.

4. Cover pan, lower heat and cook for 20 minutes.

5. Sprinkle with paprika and cayenne. Increase heat.

6. Mix wine vinegar with tomato purée. Add to pan.

7. Cook a couple of minutes, constantly stirring.

8. There should be no loose liquid or oil in the pan.

1. Do not act in order to receive a payoff.

This is what is causing much of our discomfort as individuals and a society. As soon as you act with the purpose of receiving something, you have removed love from the act. The goal is to act as if all your needs are met, then all your thinking and behavior comes from a different perspective. You also find that you act more effectively to get those things that you truly want, because you are acting and thinking as if you already have them. The alternative is acting and thinking as if you don’t, and guess what, you don’t. The state of mind of having something creates it, not the other way around.

The place you see this most is in relationships. The more you need in relationships, the less you get. This is simply because you are saying that you are not whole until someone else meets those needs that can never be met. Often what happens is that you eventually get the opposite because you are trying to show yourself that you must look inside. Once again, in relationships you must look to be loving, respectful, and accepting, because this is saying that you have all these things to give. In the end these things will be overflowing from you. Remember if you want to have something, give it, because you must have it if you can give it.

Abundance is another area this concept plays a major role. The more you say you need and operate from a place of not having enough, the more that state of mind will be created physically. This is why the very wealthy can sometimes feel impoverished, and the very poor can sometimes feel wealthy. Remember that perception is everything and that your thinking, feelings, and actions come from those perceptions.

2. You are the only judge of your life and what you will judge in the last moment of your life, is how well you loved.

Believe it or not, you do not really care what you accomplish in your life. How much you acquire, and how successful you are will not mean a thing when you decide to leave your body. Imagine that you are all living your own movie. Each movie has different characters, a different plot, and a different setting, yet the goal for each conclusion is the same. The happy ever after ending for every movie, is that the main character loved well at least once in their life in spite of circumstances. You have probably noticed that people on their deathbed, do or say something loving, often out of character, before they go. This is because they are closer to their spirit and may finally realize that to love well was their goal. Imagine if you lived with that consciousness while you were healthy and had time. Everything else physical comes to an end when you die, but people can take your love with them long after you die.

3. You are perfect, were perfect, and always will be perfect.

To the degree that you believe this, is how much physical success you will have. The people who believe in themselves and their ability are the ones who have lasting success in their lives. Belief creates reality. Some people have success for fleeting periods of time, but it doesn’t last if their belief in themselves is dependent on what they do or what others think of them.

Belief in yourself is not like what you consider ego or arrogance. To truly believe in this perfection, you must also believe in the inherent perfection of all people and things. Remember how all things were created. Therefore you do not believe you are better than anyone, even though you may act better and have more success because you know the truth about yourself. You never have to judge or be right because you know that you cannot make anyone believe in themselves, though you can show them what it looks like. Your belief in the constant perfection of creation allows you to know that you are successful always because you cannot be anything else. Then what you choose to create will be a success and you know you can create anything.

4. You act based on what you know.

This sounds simple but is actually very profound. In order to act in a truly loving way, you must know what love really is. To be successful at anything, you need to know what success is. How many people are attempting to be successful in relationships, but don’t know what to do because they have never learned what a loving, successful relationship looks like. If you do not know what to do, you will do what you have learned, or try something that you think might work, sometimes getting lucky.

You cannot program a computer without knowing what actions you must perform. If you must learn things because it is so difficult to remember in your physical state, perseverance, patience, and belief in yourself come in handy.
Sometimes you have housed yourself in a body which does not allow you to be successful at certain physical endeavors. This you do because you choose to limit yourself so that you can focus on your higher desire to succeed at something else. If you were physically capable of the other things, you may not choose to do the thing that you really want to accomplish on a spiritual level. Many handicapped people know this and don’t like it when people feel sorry for them. They may not know why they don’t like sympathy, but they know it feels wrong.
Believe this. You have chosen the body conditions, and situations you experience. This is done on a spiritual level and for good reason. Your goal is to find out what you can do with it, not feel bad about what you cannot do.
So if you want to run a marathon, but your legs don’t work, don’t focus on not running a marathon. Find out what you can do because you cannot run a marathon.

5. Fear is your biggest enemy, and can only be conquered by faith.

Fear tells you that to only love will not be enough. Fear and faith cannot coexist or control behavior together. One or the other has to take over. Believe it or not, which one takes over is your choice. This may not appear so, because many of you have developed a habit of acting on your fear. Remember that you can act with faith even though you are feeling fear. Which habit have you developed?
This goes back to the role of emotions and how you have developed a script, so to speak, about which behaviors go with which emotions. When you say you are depressed, you are really labeling your set of behaviors and thoughts. A good experiment is to consciously act in a way that your feeling does not describe. For instance, if you are angry, try smiling and saying something nice. If depressed, exercise and tell someone what a beautiful day it is. Most importantly, if afraid, do the thing that you are afraid of if it is in your best interest (jumping off a building may not be included in this).

You may find that these strategies make you feel like a fraud, but they will show you that you can do whatever you choose in spite of what you are feeling, including loving. Remember to use the feeling as a message, but choose the behavior that most effectively and lovingly responds to the message. Knowing that you can choose gives you real power over your life.

I understood the concept of faith. To me it is a powerful word that literally leads to mental invincibility. I was really beginning to feel it in my life.

The next principle takes from the last and is perhaps the most difficult for all of you.

6. No action is involuntary, including your thoughts.

Many of you may have at least come to believe that this is true for overt behaviors, but still struggle with applying it to thoughts. The scope of this principle is out of most human conception. There is not even a body function that is completely involuntary, though the medical profession would like you to believe that they are. Most of you simply do not know the force that controls your so-called autonomic nervous system. Once you really learn where and how thoughts work, you will know this force.

Many of the things you say you are (shy, stupid, alcoholic, etc.), have (depression, diabetes, cancer, attention deficit disorder, etc.), or feel (sad, angry, love, etc.), are actually verbs, not nouns. Whether you are doing a behavior, having a body function, or thinking, you are on some level doing something voluntarily. All of it, every event that happens in your life, and in your body, is a product of thought.

You are probably thinking that there is no way that you could voluntarily be doing cancer, but it does begin with a thought, and your body is completely controlled by thought. Do you ever wonder why you don’t die in dreams very often? Because if you really think you are dead, you are. After being diagnosed with cancer you have more thoughts about that, then more thoughts about your prognosis and course of disease. If you could examine a record of every thought you have ever had, conscious and unconscious, you could find the explanation of everything you experience in your life. We have talked about thought and belief before, but what is important is that you know what is having these thoughts and how you can be the decision maker about the thoughts you have.

When you are born, there is one source of thoughts, your soul, spirit, higher self, God, whatever you choose to call it. This source has all the ultimate truths. Over time (and not a very long time) another aspect of consciousness emerges, which you can call the learned self. This is like an observer who begins to notice that you are separate, have needs for physical survival, and can experience pain. This part continues to define itself through experience. It also defines everything and everyone around it. Within a short time, by about six years, this learned self has all but completely taken over, and is giving commands to your body and the universe by its constant thoughts. Once a thought or belief is established, it may never again be consciously verbalized in your mind again. You may call these echo thoughts because they are no longer conscious, but like an echo, they continue to fill every space available. These thoughts or beliefs are usually in the form of a conclusion and are the most constant, therefore most creative thoughts of all. They begin to operate behind the scenes very powerfully and without conscious attention.

Thought is the creative force of the universe, but it needs to have conviction and consistency to manifest in physical reality. Thought is like hammering a nail. Usually one hit will not put it all the way in. You must decide where you want it and hit it until it is all the way in so it can’t easily be pulled out. This is how the echo thoughts work. They continually hammer at the nail until it is very hard to get out. Unless they are recognized, even if you try to pull them out by replacing them with other thoughts, the echo thoughts will hammer themselves back in even if they are part way out.

This is why it is so difficult for you to change your life circumstances. You are not often aware of the echo thoughts which continually maintain the circumstances. Even if you do things to change the situation, you will find yourself in a similar one at some point if the echo thought does not change.
How do you change an echo thought if it is out of awareness? Remember that everything in the universe is a manifestation of thought. If you are unsure what your echo thoughts are, there are two ways to find out. Both of these require guessing and detective work.

First, you could simply look at the circumstances throughout your life and ask what a person with this life might believe. Ask people close to you who know about your life, what they think you believe about yourself and the world. Most people will come up with similar guesses if they have some information about your situation and they are willing to be honest. This is simply working backwards from the manifested to the manifesting thought. Even if you doubt that these beliefs are present, remember that you have lost conscious awareness of them. Therefore act as if they are true based on the evidence in your life, and you will benefit anyway. If you do not challenge a belief, you will provide evidence for it in your life, period.

A second way to accomplish awareness of your echo thoughts is to look at the major messages you got from your parents, or whomever raised you. One or both parents taught you to make conclusions about yourself, the world, and other people, by their words, actions, or other more subtle means. You likely took these conclusions and accepted them as real guiding principles in your life. You wore them like glasses which you saw everything through, and they determined how you acted, thought, and reacted throughout your life. It is then inevitable that the consequences of these accumulated acts will give you what you have today.

Most important among the echo thoughts are the I am commands that are constantly working in your self-talk. These almost always come from the pre-adult years with evidence being provided throughout your teens and adulthood. Some of the more common commands you people are giving yourselves are… I am stupid… I am a quitter… I am worthless… I am a loser… I am weak and powerless… I am fat and ugly. You also make conclusions about the future: I will never be successful; I deserve to be punished and treated badly, My life sucks; I will never be happy; I always screw up; There are no decent men out there.

All of these have endless variations which may be more specific or more general. You were fortunate to discover these as your energy blockages or bumpers as you called them. Meditation and an honest inner enquiry can also give you the awareness you need.

Once you have this awareness, you can apply the sixth principle, that all thoughts and behaviors are voluntary. This is where you must be completely dedicated to find another echo thought and corresponding behaviors. This requires daily practice in all situations with conscious intent. This must take priority over all else for you to manifest these new things in your life. The hardest part is persevering until you see results. Remember that for many years you have burned the old ways in to the universal framework. The old thoughts have become like a template which will be used until another one is complete and more prominent.

7. Gratitude is the antidote for unhappiness.

This is perhaps the easiest yet most powerful truth. When there is gratitude their can be no other feeling than joy. There is always something to be grateful for even in the most dire of situations. You must find a way to focus on that which you have and are grateful for at all times. Even if you have to look at the fact that you are breathing because you can’t find anything else. Gratitude brings with it more things to be grateful for. The universe is waiting for you to be grateful so that it can give you more.

If you are dying, be grateful for your life. If someone you love is dying, be grateful for the time you had with them. If you are broke, be grateful for your health and other’s prosperity. If you are lonely, be grateful for the time with yourself. It is up to you to find and focus on gratitude. If you are envious of what someone else has, remember you are all one and be grateful for what they have.

In the end you have a choice to be grateful or not. If you choose not to, don’t expect to be happy for any great lengths of time. If you choose to be grateful because the sun comes up, you can be happy all the time in spite of your circumstances, and you can choose to change your circumstances without need because you are already grateful for what you have. If you want more, that is fine, but be grateful for what you have until you have more.

Finally, always be grateful that you know the truth about yourself and your connection to all things including God, for these things are everlasting.

It’s no secret that tea is good for you. It provides antioxidants [which prevent damage to cell tissues], has less caffeine than coffee, and calms the soul. What easier way to reap its benefits than by adding some to your cuisine, especially during the hectic holidays?

Incorporating tea into your cooking is easy, and you don’t have to know a lot to start experimenting. The quickest way to get started is to grab a few teabags and throw them in the water when steaming vegetables, according to Ying Chang Compestine, author of *Cooking With Green Tea* (Avery/Penguin Putnam, 2000). “Infusing vegetables this way adds a delicate flavor to the food. The ones I like to use are Celestial Seasonings Blueberry Tea, or Lemon Ginger Green Tea,” she says.

“It’s also very easy to use tea as a spice when stir frying,” says Ying. When using tea in this way, you add the dry tea leaves to the heated oil as you would any other spice or seasoning. “I have all kinds of tea next to my spice rack. For chicken or fish I use green or white tea. It just depends on what I’m cooking,” she adds.

Most people have teabags in their cupboards, but may not have full leaf teas. “Don’t worry about getting loose tea or knowing about loose teas,” Ying advises. “For most cooking, bag tea is much easier. Just snip the teabag open and use the tea.”

“One thing I love to do is to cook rice with jasmine green tea,” says Donna Fellman, Director of the Tea Education Alliance and author of *Tea Here Now* (Inner Ocean Publishing, 2005) “For a heartier, savory meal use oolong [a tea that is considered in between green and black] to make your rice. It’s lovely.”

To prepare rice this way, start by making the tea. Donna recommends using loose tea leaves for this recipe. Put a teaspoon or two of leaves per cup of water in a teapot or other vessel. Heat the water to almost boiling and pour over the leaves. Steep about three minutes. Remove the spent leaves and set aside to use again later. Bring the brewed tea to a boil and add the rice. Turn down to a simmer and look forward to the delicate aroma that will soon fill your kitchen.

It’s important not to over brew tea whether you intend to use it in a recipe or drink it. Making tea stronger is not a result of longer steeping. “Any kind of tea is going to get bitter if you over brew it,” says Lenny Martinelli, Owner and Executive Chef of the Boulder Dushanbe Tea House in Colorado. “When I cook with tea I make the brew stronger by adding more tea to it.”

Consider serving chai during holiday meals, which naturally lends itself to the season with its cinnamon and clove.

The adventurous cook can experiment by combining tea leaves with other vegetables as Lenny does in his potstickers [a type of Chinese dumpling]. “I put some green tea leaves in the filling, maybe with some spinach.” For a tea-inspired holiday recipe, he creates a chicken rub with spiced black tea, cumin, coriander and cinnamon. “A nice holiday roasted chicken with dried fruit sauce, de-glazing the pan with orange juice and letting the tea and spices come out.” He adds, “I think sometimes people expect too much from the tea leaf when they cook with tea. You’re not trying to make a full tea flavor. It’s important to treat it like an ingredient. Just play with it.”

What about dessert?

Teas flavored with jasmine, rose, lemon or fruit are used to make cookies, pudding, ice cream, cake, smoothies and shakes. Try Ying’s quick green tea ice cream: Stir 1/2 teaspoon of matcha [Japanese powdered green tea] into 1 cup of softened vanilla ice cream and refreeze it. How easy is that?

In the end there is nothing like taking time out for yourself so that you can enjoy the holidays. “Make sure that while you’re busy preparing delightful holiday food that you take time to sit and enjoy a cup of tea,” says Donna. “You will get more of tea’s health giving and soul nurturing properties. The tea will prepare you to cook in a mindful way and will infuse your food with that calmness, which gets passed along to your family and guests.”

Breweries in America are growing at an exponential rate. Beer brewing is becoming big business with a resurgence of traditional types of ales and lagers combining with more exotic offerings. With a colourful history, beer carries on its controversial way to regain the traditional role it’s always played as an every-day beverage, while taking on a more creative flavour to please every palate.

Back in 1620, when the Mayflower came to America’s shores, the boat fell a bit short of its destination due to a shortage of beer, according to a passenger’s journal. One doesn’t think Puritans would have drunk beer - they were Puritans, after all - however this was the every-day drink of choice. People drank beer as we drink pop, juice, milk and water today. Each tavern and inn brewed its own beer.

It is only in modern society that we see beer as having a perilous quality. There were no laws governing beer brewing and drinking. There were no police roadblocks to catch drunk drivers. How much damage could a horse and cart inflict? Certainly there were no scantily-clad women prancing about at parties, drinking beer and impressing men with their sudsy sexiness. Beer was an every-day beverage drunk by everyone in the household from adult to child. When the Mayflower arrived, the people discovered that the Natives made their beer from maize. Wonder which beer was drunk at the first Thanksgiving? This may have been the first ever “Bring Your Own Beer (BYOB).”

The United States has become an international contender in beer brewing and the country can hold its own when in competition with other countries that are notorious for making amazing beer. The U.S. prohibition slowed things down a little, but in the 21st century, things seem to be heating up for American breweries. According to the Brewer’s Association, nearly 7 million barrels of beer will be made and drunk by Americans in 2006. That’s a lot of kegs, bottles, pints and glasses!

Online there are multitudes of sites about beer: beer brewing magazines to read like “Yankee Brew News” and “Brewery News;” breweries to visit; associations for beer-makers to join like the Brewer’s Association; festivals to attend like the Barleywine Festival in Buffalo, New York; and competitions to enter like the World Beer Cup held in Seattle, Washington. Of these sites, about 85% are based in the U.S. so the Americans seem to be leading the pack!

During the 1960s, 70s and 80s, beer in America was primarily made and distributed by large beer brewing companies. In the early 1980s, many of the states passed legislation that allowed the smaller microbreweries to get in on the action. The large companies still do big business, but many patrons are fussy and want high-quality, exclusive beers; they are the “yuppies” of beer drinkers. In and around any city in America, there are anywhere from 2 to 20 breweries within a 15-mile radius of that city and the numbers are growing. Some states have more breweries than others. Each microbrewery has a family tradition they want to maintain and each beer is different; a return to the old days when two taverns a mile apart had two different-tasting beers.

The breweries have gone back to creating beers that are made from all-natural ingredients like malt, hops and yeast. They produce traditional lagers and ales together with exotic beers that have a hint of spices, vanilla, caramel, coriander and anise. One brewery, found online, uses rose hips in their beer. Usually used for tea, rose hips must provide an interesting taste to beer. Lemon coriander beer may be quite refreshing on a hot day.

Soon we will be having discussions about what type of beer goes best with chicken or beef. We’ll hear opinions like: “The caramel-flavoured beer would go great with that cheesecake; a sweet beer just made for dessert.” Is that beer good for pasta? Would it be better with a roast beef dinner? Already there are countless beer-tasting functions. Is beer the new wine? Is there a “twirl-glass-sniff-liquid-swish-in-mouth” process for beer? Like martinis, there are excessive amounts of beer types. Perhaps the process should be expedited; Beertinis for everyone!

The beer brewing companies in America, found online, emphasize the importance of quality. They discuss the importance of tradition. Go Ahead—Have Some Coffee— It’s Not JUST COFFEE Anymore!

As I sit here one the deck with my daily morning cup of coffee,
I realize… just a few years ago I’d have had a cup of dark
strong, stovetop brew with some milk to ease the taste. No
more!! Now there’s almost every kind of coffee available that
you can imagine.

Roasting Coffee at Home

First, we’ll start with the fact that you can buy green coffee
beans and roast them to your liking right in you own home. One
way to roast coffee beans at home is to skillet fry the beans
until they are brown. They need to be cooked somewhere between
460F degrees and 530F. Beans must be kept moving so it won’t
cook them unevenly. The roasting must stop at the right time and
cooled down quickly. This is the old method but definitely won’t
taste like today’s methods and needs proper venting.

Another way to roast coffee beans is with a hot-air corn popper.
Hot-air poppers roast pretty quickly causing a bright, medium
roast and strong flavored dark roasts. Giving a clear-cut taste
opposite of beans roasted in a gas oven or in a stovetop popper.
This may be a little easier than other methods. There is less to
worry about, such as setting the temperature just right.
Although a great taste, there is a down side to using these
poppers. First of all only not all poppers are designed to roast
coffee. You should only use the ones with the proper roasting
chambers. This way makes a less amount each time than other
methods. Roasting with the popper will also cause smoke to be
more difficult to vent. Most of these poppers can be used to
make French or Espresso coffee, which is darker but are not
recommended. This may cause your popper to be over worked and
shorten its life.

Roasting beans in a gas oven was also popular. You could roast
more at a time and the oven did the venting for you. Just set
the ovens temperature like baking. This had to be a much easier
way and the results were rather good. Don’t forget, the timing
and cooling process for all roasting is very important and may
be different in other blends to achieving the goal for a great
cup of coffee.

The only way you are going to find out which technique you might
enjoy to use is to find a whole bean coffee roasted style that
you already like, then try to make it yourself at home. Do a
little experimenting!

Brewing Methods

Next let’s move on to the many different brewing methods. There
are several different ways in which to brew coffee. Before you
choose a coffee maker you need to understand first what you
demand out of the machine. It will be a question only the person
using it can answer. Let’s examine the differences a little
closer.

The filter drip is the most popular method used to brew coffee
because it is easy to operate and consistent. Water is poured in
a chamber where it is heated and slowly poured over the ground
coffee. This can be done two ways. It can be electronically
dripped or manually poured over the grounds. Some electric
machines can be preset to have the coffee ready for you when you
wake up in the morning. Others may prefer the taste of
hand-brewed coffee for a different flavor.

The French drip is another form of drip coffee making, which is
made without paper filters. A separate top sits above the
porcelain coffee pot and acts as the strainer as the water soaks
into the grounds. Working its way through the strainer, coffee
liquid makes its way to the bottom pot for hot steaming coffee.

The Percolator was the preferred way to make coffee in the
1950’s. Now coffee drinkers see the light that the coffee made
this way was thin, watery and bitter. Most people may remember
it by the perking pot and the aroma it gave off.

The Neapolitan flip device is made up of two segment. The whole
product comes in aluminum, copper or stainless steel. An area in
between the two segments holds the coffee grounds. The lower
part is poured with water and put directly on the stovetop to
heat. While boiling the steam goes through a hole under the
grounds. After that, the pot is removed from the stove, flipped
over to drip the water on the grounds, which go into the serving
pot. The down side to this is that it only makes about 3 or 4
cups per serving.

There are two different types of espresso makers, stovetop and
household electric counter top model. A nice characteristic
about the counter top model is it can steam milk for cappuccino
and latte’s. Stovetop on the other hand have two parts similar
to the Neapolitan flip method only no flipping needed.

French Press is a trendy European way that allows for more oils
and coffee solids that give you a cup of coffee with a lovely
smell and has a dense body. More of your strong coffee drinkers
would prefer this technique. Although good and strong, some
grounds may enter the coffee during process. Vacuum procedures
are more involved and are used for ceremonies mostly by the
Japanese. They are rare and very hard to find.

The Middle Eastern way is popular of course in the Middle East
and also Greece and Turkey. Their form of making coffee is also
very different and comes out to be dark, thick and syrupy
tasting. Because it is so rich, one or two cups a day would
probably be all I could drink.

Last but not least on the list, the cold water method simply
soaking the coffee grinds in cold water for about a day,
straining the grounds, and storing the liquid in a refrigerator
for a few weeks. When you want a cup, boil some water and add
liquid to desired taste.

Makes a rather mild cup for those of you who like it that way.

If you’re not into roasting the beans yourself, your choices are
still many. Coffee manufacturers have given us an almost
unending list of different blends and flavors. How the coffee’s
ground after its roasted will have a major effect on the taste
of the coffee. There are regular, coarse and finely ground
coffees.

The taste is also affected by the combination of the type of
coffee used. The two categories of trees from which the coffee
beans come from are called Arabica and Robusta. The Arabica is a
milder coffee and the Robusta a much stronger coffee.

Another important addition to the coffee world has been the
addition of many flavorings, and flavored creamers. If you
